Day 1 - Pinto Beans
1 lbs Beans (unless cooking for large family then double recipe)
1 tbs Salt (at least)
Pinto Bean Seasoning
Bacon or Hamhocks
Water
* Rinse beans for 30-45 seconds
* Place beans in croc pot and pour in 8 cups cool water
* Let sit over night in dark place (counter is fine) If using hamhock, soak in seperate container over night
* Rinse beans off/Drain
* Pour back in crock and add water again
* Add bacon or rinsed hamhock
*Add salt and seasonings as desired
*Cook on low 6-8 hours (or all day)
Pour over white bread or cornbread and enjoy. Relish is good in a bowl of beans =)
Refrigerate leftovers
Day 2- Chilli
1 lbs beef
2-3 packs of Chilli powder (3 packs if you want extra spice)
2 cans tomato sauce
Leftover beans
Cook meat until brown.
Drain and rinse with hot water
Drain beans and lightly rinse
Pour ingredients into a pot ( quart at least)
Cook 20-30 minutes
Serve with crackers, cheese, sour cream onions...however you like your chilli
Refrigerate leftovers
Day 3 - Chilli topping
Option 1: Potatoes
2-3 Baking taters
Leftover Chilli
Aluminum Foil
Toppings
Preheat oven to 350
Rinse Potatoes
Wrap in foil with desired amount of butter
Place on cookie sheet
Cook 1 1/2-2 hours *until potatoes are tender
Open top with reheated chilli YUMMY!
Option 2- Tater Tots
Frozen tots
Chilli
Cook tots as directed
Top with reheated chilli
option 3 - Frito Pie
Fritos
Chilli
Cheese
Tortillas *optional
Reheat chilli
Put fritos in bowl (or in tortilla)
Top with chill and cheese
